Lime Custards

2/3 cups sugar, divided
2 tablespoons cornstarch
1 envelope unflavored gelatin
1 1/4 cups water
2 eggs, well beaten
1/3 cup frozen limeade concentrate
1 cup fresh raspberries
In a small saucepan stir 1/2 cup of the sugar, cornstarch and gelatin until well blended. Stir in water. Cook over high heat, stirring constantly, until mixture boils. Remove from heat. Pour half the hot sugar mixture into the eggs. Stir until well blended. Pour egg mixture into remaining hot sugar mixture and stir until blended. Reduce heat to very low. Cook, stirring constantly, only until mixture starts to bubble at edges or reaches 160 degrees, about 1 minute. Remove from heat. Stir in limeade. Divide custard into 4 6-ounce custard cups. Cover and chill until firm, several hours or overnight. Reserving a few berries for garnishing, place berries and remaining sugar in blender. Cover and blend at medium speed until smooth then chill. To serve, unmold custards onto a serving plate. Carefully spoon 2 tablespoons of the raspberry puree around each custard and garnish with reserved raspberries.
