Sour Cream Cherry Walnut Bread

2 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1/2 cup butter or margarine, softened
1 cup Land O Lakes light or fat-free sour cream
3 large eggs
1 scant teaspoon salt
3 teaspoons baking powder
1/2 teaspoon baking soda
2 teaspoons rum extract
2 teaspoons maraschino cherry extract
1/2 cup maraschino cherry juice
1 1/2 cups coarsely chopped walnuts, toasted
1 1/2 cups chopped maraschino cherries, all red or red and green
Preheat oven to 350 degrees. Grease bottom only of 2 2-pound loaf pans. Beat together all ingredients except nuts and cherries in a large bowl on low speed for 15 seconds. Beat on medium speed for 30 seconds, scraping sides of bowl. Stir in nuts and cherries. Pour into pans. Bake 70 to 75 minutes or until tested done. Immediately loosen sides of loaves from pans. Remove from pans and cool completely on a wire rack. wrap well and refrigerate for at least 8 hours before slicing.
