Cream Cheese Fudge

4 1-ounce squares unsweetened chocolate
2 3-ounce packages cream cheese ,softened
4 cups sifted powdered sugar
1/2 teaspoon vanilla extract
1 cup chopped pecans
16 pecans haves, optional
Melt chocolate in the top of a double boiler. Combine cream cheese and powdered sugar and beat until smooth. Add chocolate and vanilla and beat well. Stir in chopped pecans. Press mixture into a lightly greased 8-inch square pan. Chill until firm and cut into squares. Top each square with a pecan half, if desired. Store in the refrigerator. Makes 16 squares of fudge. Note: If you are concerned about fat, use fat-free cream cheese and non-stick spray.
