Blueberry Cobbler

1 1/2 cups sugar
2 1/2 cups water
1 teaspoon vanilla
1/2 teaspoon lemon juice
3/4 cup shortening
2 1/4 cups self-rising flour
1/2 cup milk
2 cups blueberries
1/2 cup margarine
Combine sugar and water in a heavy saucepan and stir well. Cook over medium heat, stirring constantly, until sugar dissolves. Stir in vanilla and lemon juice then set mixture aside. Cut shortening into flour with a pastry blender or two knives until mixture, resembles coarse meal. Add milk to flour mixture, stirring just until dry ingredients are moist. Turn dough out onto a lightly 4 to 5 times. Roll dough to a 9x12 rectangle. Spread blueberries over dough and roll up jelly roll fashion, beginning with long side. Set the roll aside. Melt the margarine in a 9x13 baking dish. Cut the rolled dough into 12 1-inch slices. Place slices, cut side dow ninth the melted margarine. Pour the set aside sugar syrup around slices. Bake at 350 degrees for 50 minutes or until golden brown. Serve this blueberry cobbler with whipped topping or vanilla ice cream. You can serve this warm or cold.
