Apple Cake

2 cups sugar
1 1/2 cups oil
2 teaspoons vanilla
2 eggs, well beaten
3 tablespoons lemon juice
3 cups flour
1 1/4 teaspoons baking soda
1 teaspoon salt
3 cups peeled and chopped fresh apples
1 cup chopped pecans
1 teaspoon cinnamon
Put apples in a bowl and pour a little lemon juice over them to keep fresh. Combine sugar, oil, vanilla, eggs and lemon juice in a large mixing bowl. Beat well. Mix flour, baking soda and salt in a small bowl. Add gradually to the first mixture and beat well again. Batter will be stiff. Add apples, pecans and cinnamon to batter. Beat well again. Batter will be stiff but continue to mix well. Pour batter into a greased and floured bundt pan. Bake at 325 degrees for 1 to 1/2 hours until tested done and lightly browned. Cool cake and store in the refrigerator. To reduce fat, use 3/4 cup oil and 3/4 cup applesauce.
