2 cans black-eyed peas, drained
1/3 cup self-risisng flour
1 egg
1/2 teaspoon sage
1 small onion, finely chopped
3 tablespoons oil
Mash black-eyed peas. Combine with all ingredients except oil. Heat oil in skillet and drop mixture by the spoonful to form patties. Fry on medium heat until golden brown on both sides. Serve with mashed potatoes or your favorite vegetable.
