Half Leg of Lamb

3 or 4 pound half leg or lamb
1/2 cup dry sherry
1/2 cup honey
2 tablespoons diced onion
1 teaspoon sugar
1/2 teaspoon salt
8 ounces canned tomatoes, undrained and chopped
2 tablespoons soy sauce
1 garlic clove, minced
1 teaspoon dry parsley, minced
1/2 teaspoon pepper
Place lamb, fast side up, on a rack in a baking pan. Insert meat thermometer, being careful not to touch bone or fat. Bake, uncovered, at 325 degrees for 40 minutes. Drain off drippings and discard. Combine remaining ingredients and pour over lamb. Bake an additional 50-80 minutes or until thermometer registers 140 degrees (rare) or 160 degrees (medium), basting often with drippings. Makes 6 to 8 servings.
