1 cup sugar
3 tablespoons flour
2 tablespoons butter, softened
3 eggs, separated
1 teaspoon lemon juice
2 cups buttermilk
1 teaspoon baking powder
6 tablespoons sugar
1 10-inch unbaked pie shell
Mix 1 cup sugar and flour. Add butter, beaten egg yolks and lemon juice. Beat until creamy. Add buttermilk gradually, beating all the time. Pour filling into pie shell. Bake at 425 degrees for 10 minutes. Reduce the temperature to 350 degrees and continue baking 20 to 25 minutes or until firm. Beat the egg whites until foamy and add baking powder. Beat until stiff, gradually adding 6 tablespoons sugar.Flavor with a few drops of lemon juice. spread meringue on cooled pie and bake pie at a low heat meringue browns.
