4 egg yolks
1 14-ounce can sweetened condensed milk
1/2 cup fresh Key lime juice (bottled Key lime juice may be substituted)
Zest of 1 Key lime, optional for stronger flavor
1 9-inch graham cracker crust
1 cup whipped cream
Preheat oven to 350 degrees. Place egg yolks in a small bowl and beat with electric mixer for 1 minute or until yolks are are frothy and deep lemon color. Continue beating at low speed and gradually add milk. Beat another minute. Continue beating while you slowly add Key lime juice. The mixture will thicken immediately.Continue beating only until all ingredients are well combined and mixture is smooth. Spoon filling into pie shell and bake 20 minutes. Remove from oven, cool and refrigerate. Top with whipped cream before serving.
