8 medium potatoes, boiled in skins
1 1/2 cups mayonnaise
1 cup sour cream
1 1/2 teaspoons horseradish
1 teaspoon celery seed
1/2 teaspoon salt
3/4 cup chopped fresh parsley
1 medium onion, finely chopped
Peel potatoes and cut into thin slices. Combine mayonnaise, sour cream, horseradish, celery seed and salt and set aside. Combine parsley and onion. In a large serving bowl, arrange layers of potatoes, salted lightly, mayonnaise mixture then parsley mixture. Continue layering ending with parsley. Do not stir. Refrigerate at least 8 hours before serving.
