Ingredients
No-stick corn oil cooking spray
1 1/4 cups corn meal
1/2 cup flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
3 egg whites
1 egg
1 cup lowfat milk
1 cup (8-ounce can) cream-stlye corn
1 cup (4-ounces) shredded Jarlsberg or Jarlsberg Lite cheese
3/4 cup corn oil
1 can (4-ounces) chopped green chilies, undrained
1/4 cup chopped onion
1 minced jalapeƱo pepper (original)
Directions
Preheat oven to 450 degrees. Spray 10-inch cast iron skillet with cooking spray (heat skillet in oven 1 to 2 minutes, just before batter is ready). In medium bowl, mix first five ingredients until well blended. In large bowl, stir remaining ingredients until well-mixed. Add flour mixture and stir just until moistened. Turn into heated skillet. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean.
