Ingredients
4 teaspoons baking soda
2 cups boiling water
2 cups raisins
4 cups flour
2 cups sugar
1/2 teaspoon salt
4 tablespoons oil
Directions
Mix baking soda and water and pour over raisins. Let stand overnight with stirring. Next morning, sift together the flour, sugar and salt and stir this into the raisin mixture. Add oil and continue to mix well. Batter will be thick. Grease and flour 3 1-pound coffee cans and put one third of the batter into each can. Cans will be about 1/2 full. Bake at 350 degrees for 30 minutes. Reduce heat to 325 degrees and bake another 30 minutes. Near the end of baking, cover the cans when bread tests done. Place cans on their sides and roll to loosen bread from sides. Serve with cream cheese. This bread freezes well.
