Fabulous Carrot Cake

1 1/2 cups margarine, divided
1 cup packed brown sugar
1 cup granulated sugar
3 eggs
20 ounces crushed pineapple, drained
4 cups shredded carrots
1 cup seedless raisins
2 teaspoons vanilla extract
3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon salt
8 ounces cream cheese, softened
1 1/2 cups powdered sugar
1 teaspoon grated lemon peel
1 tablespoon lemon juice
Beat 1 cup margarine and sugars until fluffy. Beat in eggs. Beat in pineapple, carrots, raisins and vanilla. Combine flour, baking soda, cinnamon, ginger and salt. Gradually add to pineapple mixture and beat until blended. Pour batter into 5 greased and floured mini loaf pans. Bake at 350 degrees for 40 minutes or until tested done (or bake in a 9x13 pan for 50 to 60 minutes). Cool 15 minutes. Remove from pans. Cool completely on a wired rack. Beat cream cheese with remaining margarine. Beat in powdered sugar, lemon peel and lemon juice. Frost cakes.
