Stuffed Jalapeño Peppers

12 jalapeño peppers
3 ounces cream cheese, softened
1/2 cup shredded sharp Cheddar cheese
1/4 cup sliced green onion
12 pimento strips
Rinse and drain peppers. Slit lengthwise on one side and remove seeds and veins, leaving stems attached. Beat cream cheese until fluffy. Beat in Cheddar cheese and green onion. Stuff each pepper with cheese mixture. Arrange stuffed peppers on a oven proof serving plate or baking sheet. Bake at 350 degrees for 10 minutes or until the cheese melts. Remove from oven and top each pepper with pimento a strip.
