Bacon Topped Meatloaf

½ stick butter
1 onion, chopped
2 cloves of garlic
½ cup of chopped red or green bell pepper
1 carrot, chopped
1 can tomato paste
¼ cup Worcestershire sauce
1 pound of ground beef
1 cup of Italian bread crumbs
2 eggs, beaten
1 teaspoon of thyme
3 tablespoons of brown sugar
2 tablespoons of dijon mustard
2 tablespoons of red wine vinegar
1 teaspoon of salt
1 teaspoon of pepper
6 slices of thick-cut bacon
Melt butter in a large skillet, then add onion, garlic, bell pepper and carrots and sauté for about 4 minutes until tender. Stir together tomato paste and ¼ cup of Worcestershire sauce and set aside. Mix all other ingredients, except bacon, and form in a greased loaf pan. Pour tomato paste mixture over the meatloaf. Place strips of thick cut bacon over the meatloaf and bake for 1 hour on the grill or in the oven at 350 degrees.
