Creamed Spinach with Bacon

½ pound bacon, cooked
1 package frozen spinach, thawed
5 tablespoons butter
1 medium onion, finely chopped
1 clove garlic, minced
¼ teaspoon cayenne pepper
2 tablespoons seasoned salt
1 small can mushrooms, drained
3 tablespoons flour
2 cups half and half cream
1½ cups shredded cheddar cheese
2⁄3 cup grated Parmesan cheese, divided
½ teaspoon black pepper
Preheat oven to 350 degrees. Butter a 9-inch baking dish. In a medium saucepan, melt the remaining butter over medium heat. Add onions and sauté 4-5 minutes until tender. Add garlic, mushrooms, bacon, cayenne pepper, seasoned salt and sauté for 1-2 minutes. Add flour and stir constantly with a wooden spoon. Slowly add cream, bring to a boil and stir until thickened about 3 minutes. Reduce heat to low, add spinach and stir thoroughly. Stir in cheddar cheese and 1/3 cup of the Parmesan cheesee and stir until melted. Season with pepper. Transfer to buttered baking dish, sprinkle with remaining Parmesan cheese and bake for 25 minutes until bubbly on top. Let sit for 15 minutes before serving.
