Ingredients
8 skinless thighs (with bone) you can use boneless chicken breast cut into thirds.
Flour as needed
4 tablespoons butter
4 tablespoons olive oil
1 cup of good balsamic vinegar
2 red peppersĀ 
1 red onion
1 sprig of rosemary (use on the stem)
salt and pepper to taste
Directions
Wash and pat the chicken dry. Lightly flour the chicken. Cook the chicken in the butter and oil until golden brown on all sides. Cut the onion and peppers into thin strips. Add the onions peppers, balsamic vinegar, rosemary, salt and pepper, reduce heat to simmer and cook uncovered for 15-20 minutes. If the mixture becomes dry add boiling water in small amounts to moisten. I serve this dish with risotto or pasta. Makes 4 servings.
