Ingredients
1-1/4 cups sugar; 2-1/4 cups Bob's Red Mill gluten-free all purpose flour; 2 cups raw gluten-free quick cooking oatmeal;
1 teaspoon baking powder; 2-1/2 teaspoons Xanthan gum; 1/2 teaspoon baking soda; 3/4 teaspoon salt; 2 teaspoons cinnamon; 1 cup raisins; 1 cup vegetable oil; 2 eggs, beaten; and 1/4 cup milk
Directions
Place all ingredients in a large bowl and mix by hand (do not use electric mixer to combine the ingredients). Using a tablespoon scoop, drop mounds of dough onto a parchment-lined cookie baking sheet. Bake 13-14 minutes in preheated 325 degree oven. Let cool 5 minutes before removing from cookie sheet. Yield: approximately 5 dozen
