1-3 pounds Hamburger meat
1 large onion
2 cans Mexican style chili beans, undrained
1 151/4 ounce can whole kernel corn
1 15 oz. can tomato sauce
1 can diced tomatoes with green chilies
1 141/2 oz. can diced tomatoes
1-2 packages taco seasoning mix. ( according to how spicy you like your soup)
1 1oz. envelope Ranch style dressing mix
11/2 cups water
Toppings: corn chips, shredded cheese, sour cream, shredded lettuce, chopped tomatoe
Cook beef and onions in a large pot over medium-high heat until meat is browned and onions are tender, stirring until meat crumbles, drain.
Stir beans and next 7 ingredients into beef mixture and bring to a boil. Reduce heat and simmer, uncovered 15 minutes, stirring occasionally.
Spoon soup into bowls, top with desired toppings.
May also serve with Mexican cornbread!
