2 eggs, 1 tsp soda, 1 1/2 cups all purpose flour, 1/2 cup pecans or walnuts, 3/4 cup sugar, 1 cup persimmon pulp, 1 tsp cinnamon, 1/2 cup veggie oil, 1/2 tsp salt, 1/2 cup raisins (optional)
Preheat oven to 325.
In a large bowl, mix eggs, sugar, & oil.
In a small bowl, mix soda & pulp. Add sugar to this mixture.
Combine flour, cinnamon, & salt in large bowl. Add chopped nuts and raisins.
Fold in persimmon mixture.
Pour in oiled 9x4x3 in loaf pan.
Bake 1 hour 15 min.
