Hearty Chicken Pot Pie

-Two 9inch pie crusts (homemade is best)
-Two large chicken breasts
-Favorite veggies diced, onion, carrot, potato, corn, green beans. (about two and a half cups worth in total)
-3 tablespoons olive oil
-2-3 tablespoons AP flour
-1/2-1 cup white wine
-salt and pepper to taste
Sauté chicken in oil till done, remove and add diced veggies. Once chicken has cooled, shred. Cook veggies till almost tender, they'll finish in the oven. Add flour and continue to sauté for a moment longer. De glaze pan with wine, season to taste, and add chicken back to sauté pan. A nice glossy rue should have all the ingredients coated. Allow to cool for a few moments before pouring into bottom crust. Slice remaining pie crust into 3/4 in strips and arrange into lattice pattern. Bake in a 375 degree oven for an hour, or until crust is golden.
