|Tailgate Taco Dogs|
|8 frankfurters / hot dogs (your favorite), parboiled at home before the tailgate.
1/2 small red onion, finely diced
1 avocado, peeled and mashed with a fork
1 tomato, chopped
Juice of 2 limes
3 tablespoons chopped cilantro
1/2 cup salsa
1 1/2 cup cheddar cheese, shredded
8 six-inch corn tortillas
Salt & pepper
|At the tailgate, prepare your outdoor grill.
In a large mixing bowl, season the diced onion with a teaspoon of salt.
Set aside. Combine the avocado, tomato, lime juice, and cilantro with the chopped onions. Add salt and pepper to taste.
Put some cheese into the center of each tortilla.
Top with salsa and guacamole, leaving a border around the edges.
Place a frank at the end of each tortilla. Wrap and roll the tortillas around the franks. Pierce each with a toothpick. Spray with cooking spray and grill a few minutes on each side until brown and crisp. GO TEAM!!
