Low Carb Egg Muffins

8 eggs
1 roll turkey sausage or pork sausage
1 8oz package shredded cheese
1/4 cup milk
salt and pepper to taste
Spray a 12 muffin pan and a 8x8 casserole or 10x13 casserole with canola cooking spray. In a skillet brown the turkey sausage. Drain and set aside. In a large bowl whisk the eggs with the milk, salt and pepper. Add cheese and mix well. Then add the drained sausage. Pour into prepared muffin tins and one 8x8 square casserole dish. Can also be baked in a 10x13 casserole dish. Bake in 350 degrees oven for 30 minutes. Great warmed up for breakfast later.

This is a great low carb high protein dish. It can be made with sausage of your choice. I love it with turkey sausage.
