Favorite Chicken Casserole
3 cups cooked chicken…diced
1 ½ cup cooked rice
1 cup chopped celery
1 small onion chopped fine
1 two oz jar pimento
½ cup sour cream
Pinch salt and ¼ teaspoon black pepper
¼ cup mayonnaise
1 can cream of mushroom soup and 1 can cream of chicken soup
2 tablespoon lemon juice
1 four (4) oz can mushrooms, drained (optional)
1 can water chestnuts, drained, chopped
2/3 cup grated cheddar cheese
Mix altogether and put in 9 X 13 inch casserole dish. Top with crackers or cheese nips crushed and top with little butter. Bake 350 degrees for 45 minutes. Freezes well.

This is one of the best Chicken Casserole’s I have ever eaten. It will easily make two. One to serve and one to freeze. I got this recipe from a new deceased friend whom I met while organizing and starting Hospice of Marshall County in the very early 70's. I suspect it is a very old recipe. I have never brought any home from a luncheon. Enjoy!
