2 cups self-rising flour, sifted
1/3 cup Crisco oil
1 cup buttermilk
Preheat oven to 425 degrees. Spray a small cast iron skillet with cooking spray. Add buttermilk and oil to flour. Mix until well blended with a fork until you get it to the desired thickness. Pour into prepared skillet. Bake for 10-15 minutes, or until desired brownness, and until done. Place cooked wheel on a serving dish. Cut into serving sizes. Enjoy! Serve with syrup, jelly, preserves or just by itself.

: You can also pour your batter into flour, knead well and roll into desired biscuits, if desired. I also have a “heart shaped” muffin tin that I just spoon batter into, and it works well, too.

When I got married I wanted to cook biscuits like my mother-in-law’s, because they were so good. But you could knock a barn down with my biscuits. Eventually I watched my brother's wife prepare biscuits, mixing them with a fork, so I found this recipe in a cookbook, tried it, and the rest is history. My father-in-law would cook this when his wife was either away or sick, and he always called it a Wheel.
