Fried Okra and Tomato Salad

1 lb Okra, cut into 1/2" pieces
1/2 cup buttermilk
4 slices bacon
2 Tbsp flour
2 Tbsp cornstarch
1 tsp onion powder
1 tsp paprika
1 tsp salt
1 tsp black pepper
1/2 cup red diced onion
1/2 c green bell pepper diced
1/2 c yellow bell pepper diced
12 cherry tomatoes quartered
1Tbsp balsamic vinegar
Canola oil for frying
Combine Okra and buttermilk and soak 15 min. Drain buttermilk.

Combine flour, cornstarch, onion powder, paprika, salt, and pepper. Dredge okra evenly in flour mix.

Heat large skillet to medium heat. Cook bacon. Drain bacon on paper towel. Leave bacon fat in skillet.

Add canola about 1/4" to fat and fry okra 2-3 min on each side. Remove and drain.

Add okra, peppers, onions, chopped bacon, and tomatoes in a large bowl and stir well to combine. Drizzle with balsamic vinegar when time to serve. Give a couple of shakes of salt and black pepper and toss.
