Red Velvet Berry Cobbler

1 tablespoon cornstarch
1 ¼ cup sugar, divided
6 cups assorted berries
½ cup butter, softened
2 large eggs
2 tablespoons red food coloring
1 teaspoon vanilla
1 ½ tablespoons unsweetened cocoa powder
¼ teaspoon salt
½ cup buttermilk
1 ½ teaspoons white vinegar
½ teaspoon baking soda
1 ¼ cup all-purpose flour
Preheat oven to 350 degrees. Stir cornstarch and ½ cup sugar together. Add assorted berries in this mixture and place in a lightly greased 11x7-inch baking dish. Beat butter with a mixer until fluffy, add ¾ cup sugar, beating well. Add eggs one at a time, beating well after each until well blended. Stir in food coloring and vanilla. Combine flour, cocoa powder and salt. Mix buttermilk, vinegar and baking soda in a cup, mixture will bubble. Add flour mixture to butter mixture alternately with buttermilk mixture. Begin and end with flour mixture. Beat on low speed until blended. Spoon batter over berries. Bake for 45-50 minutes or until toothpick comes out clean.
