Honey Pound Cake

3 c. soft white wheat flour
1 T. baking powder
1 T. cornstarch
1 T. vanilla
1/2 c. honey
1/2 c. coconut oil
1/2 c. mashed avocado
3 eggs
In a bowl, whisk dry ingredients. In a separate bowl, whisk wet ingredients. Combine both mixtures and mix. Oil 2 loaf pans with coconut oil and divide the batter evenly between them. Bake at 330 degrees for about 26 minutes or until done.

This Honey Pound Cake is sweet, moist, and dense. The loaves are very thin, but the pound cake is rich. It has a good amount of syrupy honey to sweeten it.
