Cookies 1 large egg 1 cup coconut oil 1/3 cup honey 2 1/4 t vanilla 1 tsp. baking soda 1 cup (heaping) hard white flour 1/2 cup soft white flour 3/4 cup almond flour quick oats macadamia nuts white vanilla chips Icecream 1 cup milk 1/4 cup honey 1 tsp. vanilla 2 cups heavy whipping cream 3 Tbsp. carob 2 large egg yolks macadamia nuts white vanilla chips |

Cookies Mix the oil and honey together. Next, add the egg and vanilla and mix. In a separate bowl, combine all three flours and the baking soda and stir. Then, mix together the dry and wet ingridients, add the quick oats, nuts, and white chips. When placing on cookie sheet, make sure to flatten the dough with your hand so you don't get round 'ball' cookies but rather 'sandwich' type cookies. Once baked, use with icecream to create icecream sandwiches. Icecream Pour milk and cream into a pot. Place on stove for until warm. In a bowl put egg yolks and honey and stir. Add the milk mixture little by little, avoiding curdling the eggs. Once all the milk mixture is poured, add vanilla and carob and mix. Return to the stove and heat until it reaches 175 degrees. Remove, cool, then place in freezer. At some point before the icecream is fully frozen, it helps make for a smoother consistency to stir it with a hand mixer. It will likely melt again at this point. Add white chips and nuts a few hours before making the icecream sandwiches. |
