2 cans shoe peg corn,drained 2 fresh tomatoes, chopped 1/2 cup purple onion, finely chopped 3/4 cup bell pepper, finely chopped 3/4 cup cucumber, chopped.
Dressing: 2 Tbls. vinegar, 4 Tbls. mayonnaise, 4 Tbls. sour cream, 1 tsp. salt, 1/2 tsp. black pepper, 1/2 tsp. dry mustard
Drain corn well. Mix corn, onions, tomatoes, cucumber and bell pepper. In a separate bowl, mix dressing ingredients until smooth. Pour over corn mixture and refrigerate over night.

I found this recipe in an old cookbook of my late mother, Margaret Stafford(Pea River Electric was my parents co-op). She loved collecting cookbooks.
