Pumpkin Cookies

2 cups vegetable shortening
2 cups sugar
1 15oz. can pumpkin puree
2 large eggs
2 Teaspoons vanilla
4 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons cinnamon
1 teaspoon allspice
1 teaspoon nutmeg
2 cups raisins
1 cup chopped pecans or walnuts
Preheat oven to 350 degrees. In a large bowl, beat shortening and sugar. Add pumpkin, eggs, and vanilla. Mix well. In another bowl, sift flour, salt, baking soda, baking powder, cinnamon, allspice, and nutmeg. Add the dry ingredients to the shortening / sugar mix. Add raisins and nuts. Mix well. Drop by teaspoonsful onto a nonstick cookie sheet. Flatten a little with the back of a spoon. Bake for 14 minutes. Remove to a baking rack and let cool.

I got this from a girlfriend who was a wonderful mother. She would bake these for her 2 girls and they loved them. Once she rolled them out and used a Jack-o-lantern cookie cutter. She said it worked great.
