|Spicy Corn Hush Turtles|
1 (11 ounce) can of cream corn
1 (11 ounce) can of whole corn, drained
1/2 cup of finely chopped jalapeños
1/2 cup yellow corn meal
1/2 cup all purpose flour
1 egg white
2 tablespoons of milk
3 cups of vegetable oil
Salt and pepper
|In a medium bowl stir together cream corn, drained whole corn, and finely diced jalapeños.
Line a baking sheet with aluminum foil and coat with vegetable oil.
Drop spoonfuls of corn mixture onto the baking sheet and freeze overnight.
Heat 3 cups of vegetable oil in a large skillet to 350 degrees.
Mix together the cornmeal, flour, egg white, milk, salt and pepper in a medium bowl.
Dip the frozen corn turtles into the batter and quickly fry until golden brown remove to a paper towel to drain.
