Loaded Cauliflower Casserole

3 15 oz Bags of Frozen Cauliflower
1 8 oz package of Cream Cheese
2 Eggs
1 1/2 Cups of Half and Half
2 cups of sour cream
1 8 0z bag of Monterey Jack Cheese
1 8 0z Bag of Cheddar Cheese
1 cup of grated parmesan cheese, fresh grated is best
2 sticks of melted butter
1 pound of bacon
1 bunch of green onions
2 tsp Salt
2 tsp Pepper
2 tsp Garlic Powder
Seasoned Panko Bread Crumbs
Cook cauliflower in microwave according to instructions on bag. Drain in colander. Put cauliflower into mixing bowl and mash with potato masher, just to break it up in smaller pieces.
Fry Bacon until crispy and break into pieces. Mix Cream Cheese, Half and Half and Eggs in blender until smooth. Add mixture to cauliflower, along with cheeses, bacon, chopped green onions, 1 stick of meted butter, salt, pepper and garlic powder. Mix all ingredients with spoon.
Spray casserole dish with olive oil spray and pour mixture into pan. Melt remaining butter and mix Seasoned Pank Bread Crumbs into butter, spread bread crumbs on top of casserole and bake in 350 degree oven uncovered until top is bubbly and brown and crispy.
