Tuna Chow Mein with Peanuts

1/4 cup chopped onion, 2 Tablespoons of chopped bell pepper, 1 Tablespoon of butter, 1 can (6 1/2 oz.) tuna,
1 1/4 cup chow mein noodles (reserve 1/4 cup to sprinkle on top), 1 101/2 oz. condensed cream of mushroom soup, 1/4 cup each milk and water, 1/8 teaspoon pepper, 3/4 cup salted peanuts.
Pre-heat oven to 350 degrees. In a large skillet, cook butter, onion & pepper until tender. Stir in tuna (with liquid)
and add all other ingredients. Pour into a 1 1/2 quart casserole dish. Sprinkle remaining chow mein noodles on top. Bake uncovered for 30 minutes. Makes 4 to 6 servings.

I've been making this since I was a young newlywed. It was given to me by my mother-in-law. I like to make a salad with greens and mandarin orange slices to accompany it.
