|Peanut Brittle I Can Eat|
|1 Cup of Sugar
1/2 Cup of Light White Corn Syrup
1 3/4 cup of Dry Roasted Unsalted Peanuts
1 TBS stick Margarine
1 TSP Vanilla
1/2 TBS Soda
|Stir sugar and syrup in 2-quart microwaveable dish (mine is Pyrex).
Put in a 1000 watt microwave and heat for 5 minutes.. (Bowl & mixture will get very hot)
Then stir in peanuts and microwave for 1 Minute and 30 seconds.
Stir mixture again and microwave for 1 Minute and 30 seconds.
Remove from microwave and quickly stir in margarine (stir about 15 times)
Then add vanilla and quickly stir (about 15 times)
Add Soda and quickly stir (about 15 times or less, do not over stir)
Quickly pour onto lightly buttered cookie pan. Gently shake and tilt pan to spread out mixture.
Allow to cool . Twist pan to loosen peanut brittle, flip over and crack into pieces with large metal spoon.
Allow microwave bowl to cool before soaking in sink. It is amazing how easy it will clean up after you let it soak.

|I love peanut brittle, but my 7 crowns do not. This recipe makes the peanut brittle very porous and crumbly.
I also have never been very successful with making peanut brittle on the stove top from a cast iron skillet. I originally saw a recipe in a local hometown paper for microwave peanut brittle. I tried it without success, so I started altering cooking times, quantities and ingredients and also microwaves. Yeah, I burnt a couple of batches and under cooked a couple of batches before I got it just right. So now when I need something sweet to take to church or for work, or just to satisfy my sweet tooth, in about 10 minutes I have some delicious peanut brittle. Every bit of it is always eaten up and a lot of my friends and co-workers have the same problems with dental work as I do. It also makes a great quick & simple, low cost present to make for Christmas. Even though I use this same recipe over and over, once in a blue moon I will burn the peanuts (don't know why) maybe full moon, low tide, etc.
