Chicken Skewers

16 bamboo skewers
2 lbs. skinless, boneless chicken breasts cut into 1 inch strips
1 tsp. sugar
1 tsp. salt
1 cup coconut milk
1/2 cup crunchy peanut butter
2 T. soy sauce
1 T. sugar
2 drops hot pepper sauce
1 clove garlic, minced
1/2 cup water
Soak skewers in water at least 20 minutes. Sprinkle chicken on both sides with salt and sugar. Put chicken into a resealable plastic bag and add coconut milk. Marinate for 30 minutes in the refrigerator. Remove excess coconut milk and thread chicken onto the skewers. Grill on the barbecue or on the stove in a grill pan for about 10 minutes. Check for doneness. For sauce: In a small bowl, mix peanut butter, soy sauce, sugar, hot sauce, and garlic. Gradually stir in 1/2 cup water until sauce is smooth. Warm sauce before serving.

I tore this out of a magazine and made it for my Christmas party a few years ago. It was the hit of the party ! The sauce tastes complex, but it is so easy. I make it as a perfect party appetizer, but you could add rice and make it a main dish.
