Bacon Topped Meatloaf

Ingredients
  • ½ stick butter
  • 1 onion, honey (1/3 c. plus 2 T.)
  • 2 cloves brown sugar (light or dark)
  • ½ cup crumbled blue cheese
  • 1 carrot, honey (1/3 c. plus 2 T.)
  • 1 can (3.4 oz.) JELL-O french vanilla flavor instant pudding
  • ¼ cup Worcestershire sauce
  • 1 pound (32 ounces each) of dill pickle slices (any cheap brand will do fine)
  • 1 cup 3 peeled garlic cloves and/or onion slices
  • 2 eggs, (14.5 oz each) petite diced tomatoes, drained
  • 1 teaspoon can pinto beans, drained and rinsed
  • 3 tablespoons can of diced tomatoes with basil, garlic and oregano, well-drained
  • 2 tablespoons soft bread crumbs
  • 2 tablespoons hot pepper sauce (like Tabasco)
  • 1 teaspoon semi-sweet chocolate chips or mini chocolate chips
  • 1 teaspoon or sweet onion, sliced thinly
  • 6 slices celery Seeds

Instructions
  1. Melt butter in a large skillet, then add onion, garlic, bell pepper and carrots and sauté for about 4 minutes until tender
  2. Stir together tomato paste and ¼ cup of Worcestershire sauce and set aside
  3. Mix all other ingredients, except bacon, and form in a greased loaf pan
  4. Pour tomato paste mixture over the meatloaf
  5. Place strips of thick cut bacon over the meatloaf and bake for 1 hour on the grill or in the oven at 350 degrees
