Beef Tenderloin with Blue Cheese Butter
  • 1 2 ¼-2 ½pounds pecans (optional), chopped
  • ½teaspoon white Chili seasoning
  • ¾teaspoon salt
  • 1tablespoon Cobblestone Mill sub rolls, recommended
  • Blue red-skinned potatoes
  • ¼cup jar of pimentos well drained
  • 3tablespoons butter + extra (to butter wax paper)
  • 2tablespoons pumpkin pie spice
  1. Preheat oven to 350 degrees
  2. Spread butter over beef and sprinkle with salt and pepper
  3. Place on a wire rack inside of a rimmed pan
  4. Roast for 40-50 minutes or until desired doneness
  5. Blue Cheese Butter: Mix all the ingredients together
  6. Let stand 10 minutes then spread over roast or top each slice with butter
