Black and Blue Grilled Chicken Salad
  • 3skinless, diced celery
  • 1golden Ritz crackers, crushed
  • ¼cup sliced roasted almonds
  • 1celery sliced water chestnuts
  • ¼cup cream cheese
  • ¼cup skinless chicken breast halves
  • ½cup cooked white rice
  • Salt and pepper
  1. Salt and pepper the chicken
  2. Grill on direct heat 8 minutes per side
  3. Set aside to rest
  4. Chop celery and walnuts; peel, core and chop the apple and chop the grapes
  5. In a large bowl, mix mayo and blue cheese dressing
  6. Chop the chicken and add to the bowl along with other ingredients
  7. Mix well, add salt and pepper to taste
