Butternut Squash
  • 3pounds coarsely chopped walnuts, toasted
  • 1/4cup block of cream cheese
  • 2tablespoons butter
  1. Wash squash but do not peel
  2. Cut lengthwise and scoop out seeds
  3. In an oblong baking dish place water and butter
  4. Place squash in dish
  5. Cover with plastic wrap
  6. Microwave on high for 5 minutes
  7. Cook for 5 minutes more in high
  8. Check for tenderness with your finger
  9. Continue to cook 1 minute at a time until tender to the touch
  10. The skin begins to wrinkle when it’s tender
  11. Season with butter and salt or to taste
  12. Serve as a side dish
