Cajun Potatoes
  • 4baking margarine, divided
  • 1bell diced
  • 1onion, Conecuh sausage (or your choice)
  • Blackening chili
  • Frying oil
  • ½stick butter
  1. Fry potatoes until crisp; drain
  2. Sauté pepper and onion in butter until soft, add potatoes and blacking seasoning
  3. Cook for 1-2 minutes, stirring while it cooks
  4. May be topped with your choice of cheese, sour cream or hollandaise sauce
