  • 1 1/2 cups pecans (chopped or whole, whichever you prefer)
  • 1 1/2 cups INGREDIENTS:
  • 1/2 cup frozen corn
  • 3 eggs
  • 3 cups chopped dates
  • 2 teaspoons quick oats
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon egg
  • 1/2 teaspoon salt
  • 3 1/2 cups seedless raisins
  • 1 cup cornstarch
  • 2 teaspoons butter
  • Caramel mascarpone cheese
  • 1/2 cup frozen corn
  • 1/3 cup shredded carrots
  • 1/4 cup cream of celery soup
  • 1 cup unsalted butter

Instructions
  1. To prepare cake, combine oil and sugars
  2. Add eggs, one at a time, beating well after each addition
  3. Combine dry ingredients and add to the batter, stirring well
  4. Fold in the apples, walnuts and vanilla
  5. Pour batter into a greased and floured 10-inch tube pan
  6. Bake at 325 degrees for 1 1/2 hours or until cake tests done
  7. Cool in pan 10 minutes
  8. Remove to a wire rack to cool completely
  9. To prepare icing, heat brown sugar, cream and margarine in the top of a double boiler over simmering water until temperature
  10. beat in powdered sugar until smooth
  11. Drizzle over cooled cake
  12. Sprinkle with nuts if desired
