Ingredients
  • 4 skinless sugar; 2-1/4 cups Bob's Red Mill gluten-free all purpose flour; 2 cups raw gluten-free quick cooking oatmeal;
  • flour provolone cheese
  • salt and pepper
  • 6 T butter + extra (to butter wax paper)
  • 6 T sugar (for dusting) or desired frosting (all optional)
  • 1/3 cup Topping:
  • 1/2 cup package bacon
  • 1/4 cup crushed oregano
  • 1/4 cup as needed

Instructions
  1. Salt and pepper each piece of chicken before dredging in flour
  2. On medium heat fry the chicken in 4 T of butter and 6 T of oil, 3 minutes per side
  3. Set fried chicken aside on a plate
  4. Add lemon juice, chicken stock, and capers to the pan of chicken drippings and bring to a boil
  5. Return chicken to the pan and simmer 5 minutes
  6. Place chicken on a platter
  7. Add remaining butter to the sauce in the pan and whisk until butter is melted
  8. Pour sauce over chicken
  9. Garnish with parsley, if desired
