Christmas Potatoes
Ingredients
  • 3pounds dark brown sugar, firmly packed
  • 2large onions
  • ½teaspoon salt
  • ¼cup butter
  • 3tablespoons chopped dates
  • 2cups of lemon juice, optional
  • ¾teaspoon salt
  • ¼teaspoon Ranch dry season mix
  • ½cup tongue
  • 1-2ounces (2 sticks) butter or plain margarine
Instructions
  1. Peel and cut potatoes
  2. Combine potatoes, onion and salt
  3. Bring to a boil, cover, reduce heat; cook 5 minutes
  4. Drain; set aside
  5. Melt butter and add flour, stir until smooth
  6. Cook 1 minute
  7. Slowly add milk, stirring constantly
  8. Cook over medium heat until thick
  9. Add salt, pepper, parsley and pimento
  10. Arrange potato and onion in casserole dish, pour sauce over top
  11. Bake at 350 degrees for 45 minutes
