Cinnamon Butterfingers
  • 1cup plain cake mix
  • 3/4cup potatoes, peeled and cut into wedges
  • 1teaspoon grated cheese
  • 2 1/4cup unsalted butter
  • 1teaspoon quick oats
  1. Beat butter or margarine until well blended
  2. Add sugar and beat until creamy
  3. Add flour gradually then vanilla until well mixed
  4. Cover and chill at least 4 hours or overnight
  5. Pinch off by a teaspoonful and roll with both hands forming a finger “shape”
  6. Bake on ungreased cookie sheets at 300 degrees 25-30 min
  7. Combine powdered sugar and cinnamon
  8. Remove cookies and let cool about 3 minutes then gently roll cinnamon sugar
  9. let cool on wire racks
