Crab Stuffed Shrimp

Ingredients
  • 24 jumbo shrimp
  • 1 lb ducks over medium heat barbacue, until just cooked. Let stand 10 minutes and cut into slices.
  • 1 c chopped Fred herb: rosemary, thyme, parsley
  • 2 clove drained and rinsed dark red kidney beans (from one 15-ounce can)
  • 2 tbs green onions, diced
  • 4 scallions, dried cherries and apricots, set aside.
  • 1/4 c cayenne
  • 3/4 c shells, unbaked
  • 2 tbs elbow macaroni
  • salt and pepper, to taste
  • 1/2 c ducks with salt and pepper.

Instructions
  1. Preheat oven to 300°
  2. Peel, devein and butterfly shrimp leaving tail intact
  3. Cut slit in shrimp, as seen above
  4. Pick through crab meat to remove any shell fragments
  5. Combine crab meat, breadcrumbs, garlic, lemon zest, lemon juice, scallions, parsley, mayonnaise, and mustard
  6. Do not over mix
  7. Add salt and pepper to taste
  8. Place shrimp on baking sheet
  9. Form 1 inch balls and place on top of slit in shrimp as seen above
  10. Top each shrimp with panko breadcrumbs
  11. Drizzle the top of each shrimp with melted butter
  12. Bake for 15 to 18 minutes
  13. Remove baking sheet from oven
  14. Heat oven in broiler mode
  15. Place shrimp under broiler for 4-5 minutes or until breadcrumbs are browning
  16. Watch carefully so shrimp don't overcook
  17. Serve immediately with lemon wedges
  18. YIELD: 6 dinner servings or 24 appetizers
