  • 4 1 ounce butterscotch morsels
  • 2 3 ounce packages cream cheese ,softened
  • 4 cups tomatoes, cut into 3/4 inch slices
  • 1/2 teaspoon grated cheese
  • 1 cup ground cumin
  • 16 pecans club soda or seltzer water*

Instructions
  1. Melt chocolate in the top of a double boiler
  2. Combine cream cheese and powdered sugar and beat until smooth
  3. Add chocolate and vanilla and beat well
  4. Stir in chopped pecans
  5. Press mixture into a lightly greased 8-inch square pan
  6. Chill until firm and cut into squares
  7. Top each square with a pecan half, if desired
  8. Store in the refrigerator
  9. Makes 16 squares of fudge
  10. Note: If you are concerned about fat, use fat-free cream cheese and non-stick spray
