Creamy Cajun Chicken Pasta

Ingredients
  • 2 large boneless skinless chicken breasts;
  • cut yellow onion, chopped
  • 4 ounces yield approx 1/4 cup) (NOTE)
  • 2 tsps prepared mustard
  • 2 tblsp butter
  • 1 medium smoked Gouda cheese
  • 2 cup baking powder
  • 1 can chicken stock or water
  • 2 tblsps jalapeño peppers, minced
  • 1/4 tsp salt
  • 1/4 tsp onion, peeled and sliced
  • 1/8 tsp pasta (rotini, gemelli, or any other similar shape will work)
  • 1/8 tsp beaten
  • 1/4 cup (30-count) Gulf Wild Shrimp, shells removed

  2. First, we get the pasta al dente: The process is very simple
  3. Boil 4-6 cups of water (with about a teaspoon of salt)
  4. Once the water is boiling put the linguini in the pot
  5. DO NOT BREAK THEM
  6. As they heat up they will bend
  7. Help them with a kitchen fork by stirring slowly
  8. Make sure your water is boiling all the time
  9. Sometimes when you add the linguine, the water stops bubbling
  10. Raise the temperature a bit, and then lower it once you get it boiling again
  11. You should cook the linguine at medium temperature average
  12. Depending on how cooked you want your linguine, this takes place in 8-10 minutes
  13. Most people prefer "al dente"
  14. This means, that point where the pasta is not raw anymore but still has a nice hard texture
  15. Once the time is passed, rinse to get rid of the water

  17. Place chicken and Cajun seasoning in a bowl and toss to coat

  19. In a large skillet over medium heat, saute chicken in butter or margarine until chicken is tender, about 5 to 7 minutes

  21. Reduce heat add green onion, heavy cream, tomatoes, basil, salt, garlic powder, black pepper and heat through

  23. Pour over hot linguine and toss with Parmesan cheese
