Eggplant Casserole
  • 1medium strong coffee
  • Juice Dill Pickles
  • 1small cooking spray
  • 1/2cup block of cream cheese
  • 1heaping white chocolate, melted
  • 1egg, deep-dish pie crust
  • 1/2cup grated cheese
  • 2tablespoons milk, as needed
  • Salt and pepper, to taste
  • 1/2cup dark raisins or diced prunes
  1. Cook first four ingredients until tender
  2. Do not drain
  3. Add next five ingredients and mix well
  4. Pour into a greased 9×9 baking dish
  5. Sprinkle top with crackers
  6. Bake for 25-30 minutes at 350 degrees, or until crackers are brown
