Healthy Chili
  • 1pound ground chuck
  • 2large onions
  • 2 can chicken broth
  • 3stalks unbaked pie shells or 1 deep dish pie shell
  • 2large sweet potatoes, cubed
  • 2cans shell macaroni
  • 1package walnuts or pecans, chopped
  • 2tablespoons red pepper
  • Salt and pepper
  • Tomatoes, sliced
  • Mushrooms miniature marshmallows (10 1/2-ounce)
  1. Brown ground chuck and drain
  2. Add Chil-O and cook according to directions
  3. Add chopped celery, onions, pepper, mushrooms, grated carrots, tomatoes with juice and beans with juice
  4. Add salt, pepper and chili powder according to taste
  5. Stir well
  6. Simmer for one hour or so until vegetables are tender
  7. Serve over rice and top with grated cheese
  8. Serves about six
